In spring and summer there is a lot of variety of seasonal fruits and it is also so colorful that you want to take it just by looking at it.

Cherries are already reaching the markets and one of the most classic sweet recipes we can make is this cherry clafoutis, typical of classic French pastries.

Cherry clafoutis

The addition of ground almonds to the classic recipe is optional. If you do not have it at hand, do not worry because you can do without it perfectly. You just have to replace it, in equal weight, with common flour. As simple as that. You will get an equally delicious cherry clafoutis.

Cherry clafoutis is a dessert, but it is also a great recipe for tea time, for a summer dessert, and also as a special snack for children. You can serve it warm or cold. But as it tends to be liked the most, it is cool, taken out of the fridge after it has rested for a few hours. We can take it accompanied by vanilla ice cream, a very rich combination of flavors.

  • 80 gr sugar

  • 30 gr ground almonds

  • 20 gr wheat flour

  • 100 ml whole milk

  • 200 gr cherries

  • 1 teaspoon vanilla essence

How to make cherry clafoutis

Cooking: 30 min.

Heat the oven to 180º C and grease a low round mold, about 20 cm in diameter. We beat the eggs with the sugar, milk and vanilla. We add the sifted ground almonds and flour, mix everything until we have a light dough.

Pour the dough into the mold and distribute the pitted cherries over the entire surface. In my case I leave some whole ones, this is optional and mere decoration. Bake on a rack for about 30 minutes or until the cream has set, it will depend on the oven.

Remove the mold from the oven, let it warm and sprinkle with icing sugar to garnish, if we wish. Clafoutis is also delicious chilled, so feel free to refrigerate it if you fancy a cold dessert.
