This apple and cherries cake is an irresistible temptation if you serve it tempered. With the unmistakable warmth of the apple cakes and the wonderful contrast provided by fresh cherries. Impossible to forget if you take it cold, accompanied by a good coffee or vanilla ice cream.

Tarta de manzana y cerezas

Ingredients

  • 115 g. of softened butter
  • 150 g of sugar
  • 2 eggs XL
  • 125 g of wheat flour
  • 8 g of yeast powder
  • 2 large Golden apples
  • 150 ml of water
  • 2 tablespoons of brown sugar
  • 1 tablespoon of ground cinnamon
  • 150 g of fresh cherries

Instructions

1- Remove the skin and seeds to the apples, cut them into large pieces of the same size, and put them in a saucepan with 150 ml of water, 1 tablespoon of brown sugar and another of ground cinnamon.
2- Cook over medium heat for 3 – 4 minutes. Remove, drain and reserve until the apples cool completely.
3- Wash the cherries, dry them well and cut them in half. We remove the seeds and reserve.
4- Beat the butter and sugar with a rod blender at maximum speed for a couple of minutes, until they whiten.
5- We lower the speed and add the eggs one by one, beating until they are integrated.
6- We sift the flour along with the yeast and add it, mixing until obtaining a uniform dough.
7- Pour the dough into a removable round mold, greased and lined with baking paper. We smooth the surface so that it is even.
8- On top we put the apple dice and the cherries that we had reserved and sprinkle with brown sugar and ground cinnamon.
9- We put in the oven preheated to 180 degrees and bake for 40 – 45 minutes, until the cake is golden brown.
10- Let it cool inside its mold and then unmold and serve alone or accompanied by vanilla ice cream.
